The Story
Three generations of Pyles,
one cast-iron skillet.
It started in a kitchen on the family farm outside Thomasville. One grandmother. One skillet. One buttermilk brine her own grandmother had taught her, scribbled on the back of a feed-store receipt.
She taught her son. He taught his daughter. The recipe never moved very far, and it never changed: a long, cold buttermilk soak, a seasoned dredge, hot oil in cast iron, and the patience to leave the bird alone until the crust earns its color.
In 2022, the Pyle family opened the doors of Pyle's Chicken Delite on West Jackson Street. Same skillet. Same brine. Same bird. Come hungry.
